Painesville natives Rick and Kristen Coleman have owned and operated restaurants in Lake County since 2015. In 2016, they launched the popular Jackpot Chicken Food Truck and recently, celebrated the one-year anniversary of Jackpot Street Food at 8630 Mentor Ave.
What started off as a ghost kitchen has evolved into multiple signature brand concepts served out of their Mentor location, including Jackpot Street Food, Jackpot Chicken, Munchies Mac, and the Quesadilla Company.
And their efforts have been met with great success.
“So far, the community’s support has been great. We got a lot of people from local businesses looking for something different than fast food for lunch,” says Rick.
Why did they choose Mentor?
“We wanted to stay in Lake County, and this is a hot area,” says Kristen, “it’s centrally located so DoorDash delivers to neighboring communities.”
They also chose their location due to its proximity to Mentor’s commercial corridor as well as their home. The couple lives in Mentor and are heavily involved with local youth organizations as well as school events and programs.
Jackpot’s journey started off with their signature wings, but the diversity of their menu offerings has helped fuel their growth.
“We’re known for our wings but our loaded mac & cheese, and quesadillas have been really taking off,” adds Kristen.
“If you’re not a wing person, that’s okay, you can grab a sandwich. If you want something a little healthier, we have salads and wraps as well,” says Rick, “A family of five can come in, and everyone can find something on the menu to suit their taste.
When asked about their own favorite menu items, Rick says with a laugh, “The apple cinnamon barbecue or the pineapple habanero wings – it depends on how much I want to burn.”
Kristen’s personal favorites include the buffalo quesadillas, mac & cheese, or loaded fries.
The couple’s vision as well as their commitment is clear, as is their appreciation for the support they’ve received.
“There are a lot of food options in the area and people have a choice of where to spend their dollar and the fact that people choose to spend it with us, means a lot,” says Rick, “We can’t compete with price, but we can certainly compete when it comes to quantity and quality. When you purchase from us, you’ll usually have enough for another meal.”
So, what’s next? They’re launching another food truck for Munchies Mac, which will debut in May. You can continue to catch Jackpot Chicken at a number of other community events throughout Northeast Ohio including Mentor Rocks.
